Butter chicken
Ingredients:
Chicken - 1/2 Kg
Cooking Butter - 2 Tbsp
Ginger & Garlic paste - 1 Tbsp
Curd - 1 Small Cup
Chilli Powder - 1 Tbsp
Salt - Own Preference
Sugar - 1 Tbsp
Garam Masala - 1 Tbsp
Cloves - 3
Cinnamon - 1 Bark
Star Anise - 1
Bay Leaf - 1
Onions - 2 Medium Size
Tomato - 1 Large
Turmeric Powder - 1/2 Tbsp
Chilli Powder - 1 Tbsp
Marination of Chicken:Chicken (Boneless preferred) - 1/2 KgCooking Butter Ginger & Garlic - 1 TbspCurd - 1 Small CupChilli Powder - 1 TbspSalt - Own PreferenceGaram Masala - 1/2 Tbsp
Method:
Step 1
Once the Chicken is marinated, keep it aside for 30 minutes. Then add 2 tbsp of cooking butter and fry the chicken till it turns out crispy and keep aside.
Step 2
Next fry 3 Cloves, 1 Cinnamon stick, 2 Cardamom, 1 Star anise, 1 Bay leaf in 2 tbsp of cooking butter. Once the spices are fried add 2 Onions and fry them till they are golden brown. Next add 1/2 tbsp Turmeric powder, 1 tbsp Chilli powder and 1 tbsp Garam masala and fry them well. Following this add 1 Tomato and cook until they become soft. Once the ingredients are cooked, keep it aside to cool and later grind it into a fine paste.
Step 3
In an empty pan add 1 tbsp cooking butter and add the ground paste (Cook for 2 mins in medium flame). Next add the fried chicken and mix well. Then add 1/2 tbsp salt and 1 tbsp sugar and let it cook for 2 mins in covered container.
Delicious Butter Chicken is ready, serve hot.
chicken curry
Ingredients:
Chicken - 1/2 Kg
Oil - 3 Tsbp
Cloves - 4
Cinnamon - 1 Bark
Cardamom - 2
Onions - 2 (Medium Size)
Tomatoes - 2 (Medium Size)
Coriander leaves - Hand full
Mint Leaves - Few
Ginger & Garlic paste - 1 Tsbp
Spice Rack Chicken Masala - 4 Tbsp
Coconut Milk - 1 Cup (Half Coconut)
Salt - Own Preference
Method:
Step 1
Add 3 tbsp oil in the cooker and wait until it gets hot, then add 4 cloves, 1 Cinnamon bark and 2 Cardamom and saute till the raw spice smell comes out.
Step 2
Next add the sliced onions to the pan once the spices are fried, cook till golden brown and then diced tomatoes along with 1 Tbsp of Ginger & Garlic paste, then saute everything. Later add 4 Tbsp of Spice Rack Chicken Powder and fry all the ingredients together under slow cook process so that the masala blends in well.
Step 3
Once the masala is cooked well, add 1/2 Kg chicken along with 1 cup of coconut milk along with a hand full of coriander leaves and a few mint leaves and saute everything well and let it set for 3 to 4 whistels in the cooker.
Delicious Chicken Curry is ready, serve hot.
fish curry
Ingredients:
Fish - 1/2 Kg
Oil - 2 Tbsp
Mustard - 1 Tbsp
Fenugreek Seed's - 1/2 Tbsp
Onions - 1 Large Onion
Green Chilli - 2
Tomatoes - 2 Medium Size
Garlic - 4 Pods
Ginger - Small Size
Ginger & Garlic paste - 1 Tbsp
Spice Rack Fish Curry Masala - 4 Tbsp
Tamarind - Small Size (Soak Tamarind in water)
Salt - Own Preference
Method:
Step 1
Firstly add 2 Tbsp Oil in a pan, when the oil is hot add 1 Tbsp mustard and 1/2 Tbsp Fengreek Seed's, once these ingredients are cooked add along 1 large diced Onion and 2 green chillis and fry them well,
Step 2
Once the Onions and chillis are cooked add 2 diced Tomatoes along with 4 minced Garlic pods and a small piece of minced Ginger fry them, then add 1 Tbsp Ginger & Garlic Paste and let it cook for 5-7 minutes,
Step 3
Once the ingredients are cooked, add 4 Tbsp of Spice Rack Fish Curry Masala and small size of soaked Tamarind (Only Water) along with Salt according to your preference. Let it be on Medium flame and once it starts to bubble, put in the Fish and let it cook for 15 minutes.
Delicious Fish Curry is ready, serve hot.
Fish gravy (vindaloo)
Ingredients:
Fish - 1/2 Kg
Salt - Own Preference
Chilli Powder - 1 Tbsp
Turmeric Powder - 1/4 Tbsp
Oil - 3 Tbsp
Onions - 2 Big Size
Tomatoes - 2 Big Size
Ginger & Garlic Paste - 1
Cumin Powder - 1/2 Tbsp
Coriander Leaves - Few
Marination of Fish:
Fish - 1/2 Kg
Salt - Own Preference
Chilli Powder - 1 & 1/2 Tbsp
Turmeric Powder - 1/4 Tbsp
Method:
Step 1
Once the Fish is marinted, keep it aside for 15 - 20 minutes. Then half fry the marinated Fish and take it down, pinch the flesh part into small pieces and keep aside.
Step 2
Heat 3 Tbsp Oil in a pan and saute 2 big onions until golden brown then add 1 Tbsp of Ginger & Garlic paste and saute them for sometime, once its cooked well add 1/2 Tbsp Cumin Powder, 1 Tbsp Chilli Powder (or according to your own Spice requirement and 1/4 Tbsp of Turmeric Powder and allow it to fry well till the raw smell is gone.
Step 3
Once the masala is cooked well and the raw smell is gone add 2 big diced tomatoes and saute until the tomatoes smash. Then once the tomatoes are cooked well add a few coriander leaves. After sauting everthing well add the fish pieces and saute again, let it cook on low flame for 5 mintes.
Delicious Fish Gravy (Vindaloo) is ready, serve hot.
mutton curry
Ingredients:
Mutton - 1/2 Kg
Oil - 2 Tbsp
Cinnamon - 1 bark
Cardamom - 2
Clove - 4
Pepper cons - 10 to 15
Red Chilli - 2
Onions - Medium Size 2
Tomatoes - Medium Size 2
Ginger & Garlic Paste - 1 Tbsp
Turmeric Powder - 1/2 Tbsp
Chilli Powder - 2 & 1/2 Tbsp
Coriander Powder - 3 Tbsp
Cumin Powder - 2 Tbsp
Salt - Own Preference
Yogurt or Curd - 2 to 3 Tbsp
Water - 2 Cups
Method:
Step 1
Add 3 Tbsp Oil in the cooker, once the Oil is hot add 1 Bark, 2 Cardamom, 4 Clove, 10-15 Pepper cons and 2 Chillies and fry them well till the aroma comes out. Then add 2 diced medium Onions and saute till golden brown colour appears.
Step 2
Once the Onions change to golden brown colour, add 1 Tbsp Ginger & Garlic paste and saute well, then add 2 medium size diced tomatoes and cook well until the tomatoes are softened. Add 2 & 1/2 Tbsp Chilli powder, 1/2 Tbsp Turmeric Powder, 3 Tbsp Coriander Powder and salt to taste. Saute and cook the masala's well until the aroma comes, then when the oil starts to separate from the masala, add in the Mutton to the masala along with 2-3 Tbsp Yogurt or Curd and mix them all well.
Step 3
let the Mutton and masala cook well for atleast 10 minutes then add 2 cups of water and let it set for 5-6 whistle's in the cooker.
Delicious Mutton curry is ready, serve hot.
mutton fry
Ingredients:
Mutton - 750 Grms
Oil - 4 Tsbp
Curd - 1 Cup
Lime - Half
Onion - Medium 2
Tomato - Medium 2
Cinnamon - 1 Bark
Cardamom - 2
Clove - 4
Fennel Seeds - Half Tbsp
Ginger & Garlic paste - 1 Tbsp
Chilli Powder - 1 Tsbp
Turmeric Powder - 1/2 Tsbp
Coriander Powder - 1 Tsbp
Cumin Powder - 1 Tsbp
Salt - Own Preference
Marination of Mutton:
Marinate the Mutton with 1 cup of Curd and lime juice and let it set for 3 hours.
Method: Step 1
Once the Mutton is marinated, add 4 Tbsp oil in the cooker and 1 Cinnamon bark, 2 Cardamom, 4 Cloves and half table spoon Fennel Seeds and saute them.
Step 2
Then once the spices are fried well, add 2 sliced Onions and saute them till golden brown, then add 1 Tbsp of Ginger & Garlic paste and saute them well, once the aroma comes add in 2 Diced Tomatoes and cooked them until they are soft. Once the tomatoes soften add 1 Tbsp of Chilli Powder, 1/2 Tbsp of Turmeric Powder, 1 Tbsp of Coriander Powder, 1 Tbsp of Cumin Powder and salt to taste.
Step 3
Pressure cook the Mutton for 7 whistles or until soft. Then transfer the Mutton to a pan and toss it and fry until its dry.
Delicious Mutton Fry is ready. Serve Hot.
chicken briyani
Ingredients:
Chicken - 500 Grams
Basmati Rice - 1 Cup
Water - 1 & 1/2 Cup
Oil - 3 Tbsp
Ghee - 1 Tbsp
Onion - 2 Medium
Tomatoes - 2 Medium
Cinnamon - 1 & 1/2 Bark
Cardamom - 3
Star Anise - 1Cloves - 5 Mace - 1Black stone flower - 1 Tbsp Fennel seeds - 2 TbspBay leaf - 2 Nutmeg - 1
Green Chilli - 3
Coriander Leaves - Handfull
Mint Leaves - Handfull
Ginger & Garlic paste - 1 & 1/2 Tbsp
Chilli Powder - 2 Tbsp
Spice Rack Briyani Masala - 3 Tbsp
Curd - 1 Scoup
Lime Juice - 1 Tbsp
Salt - Own Preference
Rice:
Soak Basmati Rice for 30 minutes before it is used in the briyani.
Method: Step 1
Add 3 Tbsp Oil in the cooker along with 1 Tbsp Ghee, Once the oil is hot add 1 & 1/2 Cinnamon bark, 3 Cardamom, 1 Star Anise, 5 Cloves, 1 Mace, 2 Bay leaves, 1 Nutmeg and fry them well. When the aroma of the spices comes out add 3 medium size sliced Onions and saute them well. Once the Onions appear golden brown colour add 3 Green Chillies along with a handfuul of Coriander leaves, Mint leaves and 2 medium size diced Tomatoes and cook them well.
Step 2
Next add 1 Scoup of Curd, 1 & 1/2 Tbsp Ginger & Garlic paste and saute well, then add 2 Tbsp Chilli Powder along with 3 Tbsp Spice Rack Briyani Masala, 1 Tbsp Lime Juice and saute everything well until the aroma comes out.
Step 3
Next add the chicken along with the soaked rice and stir everything well, (The water must be at a rolling boil when adding the rice.) For 1 Cup of Rice add 1 & 1/2 Cup of Water. Then let it set for 1 whistle. After 1 Whistel let it be on simmer for 5 minutes.
Delicious Chicken Briyani is ready. Serve Hot.
